  Ginger  Bars*....

From Judy Knutz Henry. She made a bunch and brought them with her to Edisto.  She says: "It is quick and easy and usually a crowd pleaser!  No butter either, so it has to be good for you.    Just don't think about the sweetness!!!"

           1 cup sugar
           1/2 cup vegetable oil
           1/4 cup molasses
           1 egg
           1 Tablespoon oat bran  (My addition for health....:) 

 Combine these ingredients and mix well.  Add to mixture the following....
           Dash of salt
           1/2 teaspoon ground ginger
           1/2 to 1  teaspoon ground cinnamon
           1/4 to 1/2 teaspoon ground cloves
           1   and 1/2 teaspoon soda
           2 cups flour

Form into two balls.   Place on  greased cookie sheet and pat down to desired thickness.   I usually make two strips about 15 x4.   Sprinkle lightly with sugar.  The dough should be easy to handle.  If it is sticky add a little more flour and continue.    (The dough does spread as it bakes.) 

Bake at 350 degrees or 325 convection oven for about 7 or 8 minutes.   If you want crisper cookies spread thinner and bake a bit longer or just bake a little longer.    Cool on cookie sheet a few minutes and carefully cut into slices. Remove from cookie sheet and cool.   With storage they sometimes become more "gingerly" tasting!!!   Good freezer cookies  and  suitcase travelers too!!!!!  I like them because they are so quick and easy to make.   Enjoy!!!!
